  1. I’m glad everyone is pushing cobble to start a baking biz, and maybe she should, so I’ll just be a wet blanket. In fact Mrs. D is a fabulous baker (but not cookies) and I’ve tried to push her to do a side biz. But unlike me she works too hard for it to be feasible.

    Since I am partners in a small biz, and have owned or partnered in a small biz for probably 25 yrs, let’s look at the math.

    Let’s say cobble enjoyed an income of 50k a year (and in fact it was probably much more). Let’s say cookies have a 100% margin, that is, sell $100 of cookies, $50 is profit (not including labor, since cobble does it all).

    Right off the bat, to merely replace that 50k in income, you need to sell 100k in cookies. That’s $275 in cookies every single day of the year. (Yes there are tax issues and so on).

    You can only make more by increasing sales or profit margin. Your profit will be limited by the competition and what’s called cost of entry. Baking is inherently a low cost of entry biz cuz in the beginning all you need is an oven and some skill, so big profits invite easy competition.

    The math to running a small consumer-oriented business while maintaining a middle class income is daunting. Much easier to do it as an adjunct to a real job.

    But legion, the AZ law gives them the right to check someone if they think they see a reason to. It’s vague- it doesn’t say they can be stopped only if they commit a legal infraction.
