To those you doubt the label: Yes, I’m sure there is a certain level of cheating going on, but how is that any different than believing any label? A few bad apples will exist.
As to where it comes from: is that a serious question? When the demand rose, more farmers went organic. Also, a higher proportion of food from non-western sources may be more ‘organic’ just because there are smaller farms, less fertilizers and less food-productivity-pressure. The organic coffee was probably always ‘organic’, just not sold so.
“the difference in taste…hand produced”…exactly. Also, hormone-fed animals have more residual junk, more fat, less muscle mass (because they can’t move, does that ever bother you?) so, arguably, are less tasty unless you like seriously levels of fatty mass.
I once took delivery of live cattle in a commodity trade gone bad. It was ugly. It was one of those Christmas in Sioux City events that cattle traders live for….. Why did I remember that? All this talk of beef.
