Haven’t tried that butcher, Slopey. My sister-in-law bought half a grass-fed steer last year & had a really hard time trying to find palatable ways to cook it – even the so-called choice portions. She’s an excellent cook & is accustomed to dealing w/, for instance, low-fat venison.
arkady — one of the guys at the butcher in Windsor Terrace told me their beef is grass fed, but not organic. Do you know if that is true? Do you like their beef? Do you avoid it because of grass fed? Their flank steaks are always quite good.
Los paisanos has very good dry aged beef.

Slopey – That article looks as if it’s British. A larger segment of the population there is into it & they are a much more vociferous group.
