My co-op hasn’t been regularly servicing its hot water heaters, but seems like it’s time for us to perform regular maintenance like backflushing. Can anyone recommend a reliable contractor willing to do this on a regular basis?

Don’t you have a boiler or something to heat the home? Those require far more maintenance. The person servicing your heat should be servicing your hot water.
