if you’re not into granite, why not consider butcher block? The house I grew up in has all butcher block counters and they are great in many ways. No you can’t put a hot pot down and yes you have to wipe up standing water, but they make a lovely work and cutting surface that is gentler on your dishes and eyes than stone.

Good idea to keep a small cutting board or dedicated area of counter for garlic/onion, but I think butcher block looks great and functions really, really well.  Every few years you scrub them down with steel wool and apply mineral oil. My mom’s are going strong after nearly 40 years and she even has butcher block around her sink. You just have to remember to wipe down counters if they get splashed.

OK, I’m posting a lot in a row, but I Googled what you are looking for  and I got a bunch of links, and testimonialsproscons from people using cork countertops. Suberra Cork. You might find more information that way. It’s not porous if you seal it and you can’t use it as a chopping block. 😉

Do you maybe mean bamboo countertops? I think I saw bamboo countertops in a “Green Home” display last year and they were kind of cool looking. Just for the image (not a recommendation):
