THL, I’m making another cassoulet this weekend- I only made a half recipe last time in case I didn’t love it, and I didn’t… So I’m going to Julia Child for method this time.
THL…put some crushed juniper berries in it. if you want to be even more adventurous, saute up some anchovies first until they almost disappear and then brown the shanks but definitely add the juniper berries.
Ok, so I’ll go the route of acknowledging prior application. Now, should I follow the instructions in the ad and send my info and a letter the way it says to, but address the cover letter to the partner directly or should I ignore the ad instructions and call the office? I’m sort of afraid to call the office really because I would be deflated if the guy doesn’t remember me. I know for a fact that they interviewed at least 35 people for that job when I initially applied.
Oh Dave!! You’re so right! I had that at a restaurant in Dallas once and I never forgotten it. How many would you put in per shank?
NYTimes had a recipe last year with lamb shanks braised in cirtus. Easy and delicious and very spring like.
