  1. I wrote an essay in college for my sociology department newsletter on taste. Like, why is it accepted practice to blend any strong flavor of meat with a sauce that minimizes the flavor? It makes no sense.

    Just trying to intellectually justify the fact I find mayo totally revolting. Although I eat it on the the cole slaw at Bark’s pork sandwich.

    Not sure about mayo with mac & cheese but it tastes good with steak!

    JAYSUS….a good piece of meat shouldn’t have anything on it except your mouth.

  3. Yes, Kobe cows are massaged daily, and also fed beer. The idea is have finely-grained fat interspersed with the meat.

    If you are in Japan and can’t spring for Kobe, an alternative is Hitachi beef. Damn good. No, it is not manufactured by Hitachi!! Hitachi refers to the region of Japan from which this beef comes. (for which the company is also named).
