expert, my wife is Colombian, so I’ve been around. Frankly most Latin American home cooking is based in tradition and relies too much on stuff in cans, jars, and nasty chemicals like Legion just pointed out! (That’s why I immediately took over the cooking duties the day after I got married, lol).
