I like Flatbush Farm. It’s a good restaurant. It isn’t in the league that you are envisioning.
Also, the “no reservation” thing has always struck me as something very small and very trendy places do — the places that want to be a “scene” and always have a crowd waiting around.
The REALLY high end restaurants generally only seat people by reservation and the trick is getting them.
I remember speed dialing Nobu a few years ago when you had to call exactly 1 month before you wanted your reservation and they usually booked up the place by 30 minutes after they started taking reservations. I actually got through the first day I tried and got a reasonable time (6:30, I think). Had a fantastic dinner too.
Which reminds me, I was going to Chicago once and wanted to go to Topolobampo, but I called too late to get reservations. My friend suggested we go to Frontera Grill (which is the slighly downscale version of Topolobampo right next door). Frontera Grill didn’t accept reservations, but we were prepared to hang out and wait for a table.
We got there and they said it would be 2 hours for a table. That was a big more than we felt like waiting and we were discussing other restaurant options when the hostess chimes in with “We just had a cancellation next door at Topolobampo. If you want, I could seat your there right now.” Had a fantastic dinner.
