When I was a teenager I worked at a place out on the Island called Meatfarms. It was basically a butcher shop with a small supermarket component.
I’m not easily skeeved but the one thing that I could never get accustom to handling was The sawed in half lambs head with the eyes looking at you from either side for Greek Easter and Tongue.

That’s a new one on me! My mom went with pork.
When I was a kid, our cuisine consisted of the “scrapyard” of meats: pig’s feet, goat’s head and cow stomach (tripe), among others.
When I was a teenager, I worked at a butcher in Gravesend called “Schwarz and Geraci”. As the name implied, it served the two biggest clientele in the neighborhood (as well as the sizable Greek population). I had to handle every animal part you could think of.
