I think you should hire somebody to chop. I never
did this but I hear from organized cooks that you
can chop and put in a paper bag in the refrigerator
and use later if you get chopper’s cramp.

I feel your pain, ET…I get tired of chopping tons of different things. That’s why I plan to try out the slap chop. I can’t chop too fast (when I try, I wind up hacking away at my fingers).
