Hmm, I thought about finely diced onions for a moment, but decided against them. I just use a 1/2 teaspoon of mustard and about a teaspoon or so of vinegar to add a little kick to the dressing.

I know, PS!! I stole the idea from a friend of mine’s mother. She makes the world’s truly best best potato salad.
Why is potato salad considered a summery dish? Last thing I want when it’s hot as balls out is something drenched in mayo.

Cobble!!! A little vinegar is the secret to a truly great potato salad – the kind where people say, “Wow! How did you make this? It’s incredible.”
And potato salad made with potatoes fresh from the GROUND* — it doesn’t get better than that!

oh yes, I forgot to say I added a little vinegar too but only a little since there is vinegar in the mayo and the mustard…
