    Eh – it’s hard to judge lists like these. Ssam and WD are vastly different from all of the other restaurants on the list. Jean Georges was ranked 90something and I had a much better overall experience there than either of the other two.

    Ssam has innovative food – but doesn’t take reservations, has a perpetual 1 hr + wait and has horrible service.

    WD-50 is all about that molecular gastronomy stuff – which is intersting to try once – but i have no real desire to go back.

  4. Ive started several small businesses in my day, and it is an immensely exciting and rewarding feeling to be master (mistress) of one’s own destiny. You work on the average 15 hour days, much harder than you would for anyone else, and it is a good thing.

    Unfortunately, none of my businesses were able to get anywhere because I do not have the capital to sustain them. I can’t hire people to do certain things, so I can grow the business, I have to do everything myself. I can’t buy supplies in bulk, or get samples made in areas that I don’t have the technical or mechanical means to do myself, so I can’t do some of the things that I know would be popular and make money. I can’t afford to advertise, or take part in trade shows, which would bring my products to the most people. Most importantly, if I’m working on samples and product development, that’s time I’m not freelancing and making money in order to survive, so many of my ideas never get past the planning stage.

    That’s not to say I don’t keep trying, and in my limited ways still churn out what I can, and look for places to sell and market things, like Etsy or craft shows. But any start up really needs to have a nice chunk of change available in order to get past the first couple of years, thus enabling someone to work like a dog, which no one has a problem doing, but also pay the bills. Lechecal is right. Lack of money is the main reason small businesses fail. Not the lack of a good, or even great idea, or even a first rate business plan.
