Beat the eggs, then whisk in the mayo until you get the desired color, then add lemon juice to suit your taste.
I make it in such large quantity, I’m not sure about the ratios, but it’s easy to adjust – too dark -more mayo, too lemony more mayo, too light more eggs, not enough zing more lemon. The lemon cooks the eggs, like ceviche.
