Help me out with my Chicken soup, CGar. I’ve simmered a whole chicken with celery, leeks, parsley and thyme. The chicken was falling apart, so I figure it’s done. It’s cooling in a bowl. I strained the stock, and I’m cooking that down a bit. Now…can I cook the stock down for an hour or 2 to concentrate it? Or will it get ‘funky’?
Dave, interesting Newsweek article suggests that the run-up since March in stocks, gold, oil, housing prices, etc., is an “echo bubble” waiting to burst if history is any guide:
