But WHY can’t you use ANY of the old doors? I’ve had one of my original doors fitted into a new frame by a creative carpenter.

Be very careful buying doors. Many doors are now imported junk made not from wood but engineered products and masonite. The issues with these products is they have a narrow band of wood on the edges into which one sets relitively short scews. If these ever pull out, it is not a simple matter of putting a longer screw a little deeper into the wood. Often the doors are ruined though i have a way to fix them.
Look for doors from dykes and tell them you want a solid wood core, not engineered garbage. Solid wood can be a glued up stave door.
Rouge valley doors makes solid wood doors as does simpson. Jeld wen no longer makes staves doors; i called them about a year ago and asked them.
Tru stile has 3 grades of doors, cheap, bettrr, and better. The top door line them is stave construction.
