Referring to the “Dutchman” process… I’m not so worried about doing the Dutchmen, but I am worried that the doors no longer have crisp edges all the way around the outside rails and stiles.

I have contemplated ripping 1/2-1” off of each “soft” side… and replacing with a new crisp strip of oak….joining with screws and plugs or several biscuits…and sanding….. but that seems like a lot of work for an interior door.

The other idea would be to shave off 1/16” off of each side to get a crisp edge and shim out the hinges slightly in the frame.

Probably easier to trim and shim…. About half of my 17 doors need new fluted trim any way so I’m not gonna miss 1/8” on a 28” wide door if I recase, rehang and retrim.

Problem is the new fluted trim is smaller than the 100 year old stuff….. so all doors won’t match… and $$$$.

I don’t know I’ve never hung (properly) and trimmed-out an antique door.
