induction range

On the capacity issue I got an estimate for running electric that would allow an induction stove into my apartment kitchen. My existing electric would only allow for a ye olde coil top. The quote for the upgrade was $2,000. I found in my hunt that good but not necessarily top of the line induction models were much more expensive than a gas range. In asking around, people who did the switch weren’t reporting astronomically high electric bills to me, but I couldn’t get exact numbers.  But the general advice was get the best induction range that you can afford as it would be worth the investment. No one that I talked to regretted the switch from gas to electric when that electric was induction.

is that the thing with the glass top and something underneath? my father has one. i can say this, it is easy as anything to clean (flat smooth surface, not iron parts to lift out). might be worth it from that standpoint.

not something i would buy. i will have gas until someone puts me someplace where someone is making the decisions for me.

I haven’t had one, but I am completely sold on the concept and can’t wait to redo my kitchen with induction cooktop and smaller separate oven.

The advantages seem to be major: Heats up fast (so cooking time is faster); has the advantage like gas (over electric) in that you can raise or reduce heat immediately when cooking (this for me has been the major drawback when I’ve had to cook on regular electric, and why chefs prefer gas); and also the cooktop cools down fast – it supposedly doesn’t even get hot given how induction works.

And, for those of us with asthma or just concerned about health, cooking with gas creates a fair amount of indoor air pollution that is unhealthy for anyone – I am sure I will breathe easier in cleaner air. (This has probably been made worse by cooking almost all my adult life on gas stoves with no fan that vented to the outdoors in converted brownstones or older apartment buildings – sometimes I had a window in the kitchen, but I can’t say I regularly opened it when cooking.) I now have a fan that vents outside, but I can’t wait to install an induction cooktop.

I used to love gas (over electric), but then I changed my mind when I found out about the advantages of induction and the unhealthiness of gas.

It sounds promising but I’d like to try it out first. About six months ago, the corner appliance repair shop near us had a used Viking induction range for sale for $1500! It was tempting but I wanted more info before buying, adding dedicated electric service, buying new pots and pans, etc.

My sister has one. The one thing I don’t like is that you aren’t always sure how well it is centered over the heat source. Also I had difficulty getting. a pan evenly heated up. It was very hot right over the the “burner” but not elsewhere in pan. I think I may not have been using it right. I think the pan needs to line up exactly to the size of the induction unit below, so that all parts of the pan are “induced.” There is obviously a learning curve. That said, I plan to replace my dual fuel range with an induction range when it finally dies….

so i thought about the pots and pans for these and recall that the pans my father has have reliefs in the bottoms (channels cut in the metal). i think the regular ones work, but if you set them down wet on the hot top, they hiss and spit a little as the drops of water steam off.

to what ed is saying: if you live in a small queens house like i do and have 100 amp service with say two dedicated lines for window a/c units and a dedicated for the laundry and a dedicated for the dishwasher, you will most likely NOT have the space in the box to put in a double pole 50; when i go to use my arc welder, i have to pop a breaker out to put the double pole for the welder in.

i would imagine that if you lived in a 3 story brownstone with 150 amp service and split units and three dedicated lines for appliances, you would encounter the same scenario i mention above.

if you encounter the situation I am in and do not already have the new slim breakers (i think ge makes them for GE boxes: i think two breakers sit in the space of one old one. i think), you can switch a few breakers out to gain some space. i have a GE box but it will not accept the slim breakers. so talk to a pro to see if you can do that-

in terms of equipment we run for a small shop, 50 amps is a massive amount of power.

LOVE induction cooktops. Quick and easy. But for me the real reason to buy one is that it significantly improves indoor air quality, even with an externally vented hood.

Yes, I remembered the need for extra power after I hit send. Assuming I will have to have some hefty amount of extra bucks to even think about redoing a kitchen, much less buying an induction cooktop, I think it will be worth it to me to spend what I need to to upgrade the electrical for my health – though I’m saying that without a clue of how expensive that may be. Not an issue now, as I may not even be living where I am now when I have to the money to renovate a kitchen to my growing standards.

Though reading about the health aspects after I posted yesterday, I was reminded that it isn’t just respiratory health, but also cardiovascular health, that is affected by gas fumes – and we all need to be concerned with that as we get older.

Induction is super fast and responsive.
Ikea has a 30 inch range and 30 and 36 inch cooktops. The cooktops are on sale with IKEA Family pricing this month. The better 30“ cooktop is $560, and adjusts automatically to pot size. They’re just as good or better as my $1,500 Frigidaire cooktop.
For pots and pans I‘d also recommend ikea.
They don’t consume more energy than gas cooktops, but as mentioned before you need to run a dedicated line and good service
