In Philadelphia, I had a beautiful stainless steel backsplash made with rolled edges. One of the shops that fabricate the food street carts made it. Not sure where those shops are in NYC. My guess is south Brooklyn and Queens. DIY concrete countertops are also a big moneysaver. Buld a frame. Use some metal stucco lathe backing as reinforcement and pour the concrete.

It’s expensive if you go to some high end place and have them install it for you, but you can buy sheets and DIY (although it does take some skill). That being said, Xagor makes a nice point. I’ve been known to use metal tin ceiling as a backsplash. You can find it anywhere, old or new, and it’s an easy install.

Zinc or copper are beautiful, but quite costly. The c. 1915 Hoosier cabinets I have in my kitchen have pull-out counters covered in sheet aluminum; I wonder how that would work for new counter tops? I wanted to try when we replaced the ’70s Formica in the rest of our kitchen, but was outvoted in favor of stone. FWIW one of our aluminum Hoosier counters is a 100 year old original; the other was a new replacement when we bought the cabinet >40 years ago. Both still look good, although the older one has considerable ‘patina’
