Those kitty fountains really work great – I read somewhere that cats prefer drinking running water. My cat would never drink from a bowl – I would have to turn the sink on for her and she would drink straight from the faucet. The fountain has cured that (although it does make a funny sound)
I had some leftover casserole from last night. It sounds white trash but it’s SO good.
Veggie and Rice Casserole
1 cup rice
1 (small) can stock (whatever kind you like)
1 bag frozen cauliflower
1 bag frozen broccoli (*you can use whatever veggies you like or have from leftovers. Spinach is a favorite in my house*)
1 onion
2-3 cloves garlic
1 can mushroom soup *and* one cans worth of milk
Croutons (store bought or homemade)
CHEESE- whatever you have in the fridge. I usually use a block of cheddar and about a half cup to a cup of parmesean/romano. I’ve also used leftover mozzerella, american cheese, Ricotta- whatever you got.
Cook rice in the stock. The rice will still be firm and not cooked all the way.
While you’re cooking the rice cook the veggies (I nuke em) Mince the onion and sautee the onion in olive oil in a LARGE fry pan.
Add the garlic
Add the cooked veggies.
Once they’re lightly sauteed throw in the can of mushroom soup and a cans worth of milk.
Add the cheese.
Season to taste- I do parsley, pepper, cumin, garlic powder
Once the cheese has melted stir in the rice.
Dump the whole thing into a LARGE prepared casserole dish.
Top it with coutons. If they’re the real big kind I crummble them in my hands a bit as I sprinkle them on. I’ve even used Ritz crackers when I didn’t have anything else.
I work in a boring office campus in NJ. walking outside in the sun := walking around the parking lot. So look forward daily to some interesting exchanges during lunch time. Most other threads were civic today.

Bake 350 for 30 minutes.
