  1. You can do it w/o the holes – put salt in the water, though, & the egg will ‘clot’ if it leaks. Nothing could possible be easier than bringing water to a boil & letting the pot sit. Aluminum causes discoloration.

    ugh. do they sell premade hard boiled eggs in stores that are still in the shells? i love easter and i wanted to dye eggs this year with my dog but i can’t be asked to be figuring out what kind of metal pots and pans are made of and poking holes in eggs. i dont remember it being that complicated, ive seen people make hard boiled eggs before!

    I just like the idea of a sudden vocab upgrade mid-rant…

    I stood next to this guy a couple weeks ago on a packed L train who had to be the most entertaining train-crazy ever. he wasn’t asking for anything. he started by saying that he hoped everyone was having a good day, enjoying the weather and enjoying all the beautiful men and women around them…. enjoying their bodies rubbing up against each other, enjoying the touch of another human being. this got filthier and filthier. eventually he started detailing all the different streets in the city where he had married women who liked to invite him in while their husbands were away. everyone tried to ignore him at bedford, but by union square half the car was in tears laughing.

  4. The hole is to let air out – you know that little pocket at the end? Really fresh eggs have quite small pockets but hard boiled eggs are better if they’re not too fresh – because the ‘egg’ has shrunk slightly (hence the larger air pocket), older eggs peel more easily. Dye doesn’t get in the hole.
    For a really reliable recipe, I put the eggs in an enamel (shouldn’t use aluminum) pot w/ enough water to cover them. Put the lid on the pot & bring slowly to a boil. Turn off heat & let sit for 15 minutes. Plunge eggs into iced water – careful not to drop them.
