Scott, the ice water stops the cooking so you don’t get that gree ring around the yolk, and less of a sulphur smell.
Ice water & hole help them peel easily. My method almost guarantees you won’t get green yolks.

Interesting, I’ve never heard of pricking eggs or putting them in an ice/water bath, and my boiled eggs usually turn out pretty good.
