if being gay is a choice – why does it appear in nature amongst creatures that don’t have the mental capacity to make decisions beyond about things beyond basic survival?

That’s like asking me to close my eyes and imagine a color that doesn’t exist. Impossible. Free will doesn’t exist, so I can’t define it.
