Snaps, you can roast the garlic and stick it in a jar, mix in a bit of salt, pour a little olive oil over it just to keep the air out, and it will keep plenty long.

Well, Snaps, what you get is essense of garlic mush. Which is pretty garlicky. It is pretty paste-like in consistency when you roast it.
