    don’t forget some egg. YOu need it to bind the meatball. I usually mix the beef, egg, spices and then add just enough breadcrumb to be able to form the meatballs so they will hold shape. You may want to add some finely ground onion which will add moisture. When cooking, heat the pan first, add a generous amt of oil and then add the meatballs. Get the outside seared all around and then lower your temp but and keep turning them gently. You don’t want a rapid sizzle or a meager sizzle in the oil, just a nice steady sizzle. They will take some time to cook, be patient.

    A brilliant tactician and general, Toussaint L’Ouverture, defeated the French, Spanish, and English armies and the result was a free Haiti. There are a number of interesting biographies of him.

    There is also some significant Haitian lit. The works of Jacques Roumain, especially ‘Masters of the Dew’, are well known, more so in Europe, but nevertheless quite a novel.

    Our very own Edwidge Danticat has established a significant body of literature featuring Haiti.

  3. etson- I’ve said many times I don’t have a problem with differing opinions. I have a problem with how they are expressed. benson doesn’t like preservationists. That’s fine- but those of us who are preservationists don’t need to be insulted for it. Yesterday he praised Bloomberg for the response times of the Fire Department- that’s fine. But those of us who don’t agree with the policy of closing firehouses are referred to as “bloviators.” I would go into a detailed discussion of the meaning of response times and how the FDNY works but it would be useless. I was part of that fight to keep them open and there are facts that are not considered.

    YOu and I and Legion have often argued politics, and neither of you have ever descended into insults or bashing. Nuff said.

    Rob: You don’t have to think about it, but you can SHUT UP about it. Your comments regarding Haiti offend me. I’ve lost what little respect I had left for you.

  5. Rob, if you are not saddened or moved by the horrors of the world, I can’t change that. I hope your little bon mots of inappropriate “humor” are your way of coping with things that are too big to deal with straight on, and you are really moved to compassion, and more importantly, to action. I just wish you would consider NOT sharing some of those tidbits with us. They are not cute, appropriate, funny or endearing, and writing them does not make you any of the above either. Think about it.

    I’m making meatballs for the very first time. I got my Mom’s recipe. But whenever I get a recipe from her over the phone, she always leaves something out and never gives me measurements.

    Ground Beef, bread crumbs, salt, pepper, crushed garlic, corriander. And she said whatever other spice I want. I’m thinking some fresh parsley and a little red pepper. I like spicy things.
    Shape into meatballs and fry.

    Is that it? What’s the ratio of ground beef to bread crumbs?
