  2. I used to do a quick dish in summer [and need to do this again soon now that I think of it!]

    steamed zucchini slices
    slivered sun dried tomatoes or grape/cherry tomatoes cut in half
    pitted olives, cut in half
    slivered basil
    roasted peppers, cut in thin strips
    olive oil, salt, pepper to taste

    Dump on top of a bowl of bow-tie pasta, toss and serve with a little good parmaesan.

    Quick and easy, and YUM!
