I really like this idea. I worry about ongoing maintenance and cleanliness though, especially around the oils and butters. Hopefully they’ve addressed those issues in the design and staffing plan. It will be interesting to see if some items can be included here, such as yogurt and other very perishable items. It will also be a coup if Ms. Metz can figure out a way to position herself so it doesn’t feel like just another “health food” store. I think getting this idea into the mainstream is where it will be most valuable.
