Frustrated by the nonexistence of bulk grocery stores in Prospect Heights, neighborhood resident Sarah Metz has set out to start an eco-friendly supermarket, to be known as The Fillery.

“We aim to improve the health of our community in Prospect Heights, Brooklyn and the environment by offering alternatives to the plastic entombed, chemical-laden options,” reads The Fillery’s Kickstarter page, where as of this writing Metz has already raised $11,700 of her $15,000 goal.

The store will be packaging free, like a forward-thinking Costco where flour, grains, nuts, seeds, dried fruits, beans, teas, coffees and 150 types of spices will be distributed from gravity dispensers and bulk bins into reusable bulk bags or containers customers bring from home, Metz told Gothamist.

To be designed by Metz’s sister, an architect, The Fillery will have a learning space, CSA pickup point and nut-butter grinders.

Metz already has an investor, but her Kickstarter will be accepting pledges until Friday, April 1. Rewards include a gluten-free baking class, a course on indigo dying, and Metz flying anywhere in the U.S. to teach backers donating $1,200 or more how to make her award-winning apple pie.
