Hi – We’re embarking on a kitchen renovation and I’d love to get some recommendations for a good gas stove, since I haven’t been excited by anything I’ve turned up yet. Here’s what I’m looking for: – None of this “Precision Simmer” and “Power Burner” nonsense. I want to be able to simmer and boil on any of the four burners. – I’m more concerned with low heat than high heat. I feel like many of the newer stoves that I cook on don’t allow for as low a heat as I’d like (except on the stupid “Precision Simmer” burner). – No computerization. Just knobs. – I’d like 30″ but could bump up to 36″ for the right stove. Thanks.

Good luck?I don’t think you can get exactly what you say you want?we spent years researching this (with the added complication that we were replacing a 36″ range). The options were: 1\. “Regular” stoves, limited in 36″, common in 30″, which all have computerized oven controls and a variety of burner sizes 2\. Real restaurant ranges which lack broilers and aren’t really legal for home installations 3\. Restaurant-style stoves which are obscenely expensive?we almost settled on one of those (at > $8,000) until my wife realized how low to the floor the oven was on all the American-made ones; the European-made stoves had other problems (could you get parts if the US distributer went out of business?) 4\. Restored vintage stoves (we liked late ’40s?early ’50s models which are well-made and have modern-enough features). They too are obscenely costly; as expensive as pseudo-restaurant ranges. They also all seem to come from thousands of miles away, mainly California. There were regional gas stove manufacturers in those days and only California models seem to have pilot lights for both the burners and ovens; with others you need to use a match for the latter, which my wife didn’t want?we’re old enough to have had that in rental apartments and it’s a PITA. We spent many months on the waiting list of a well-known CA restorer who eventually stopped answering our emails and voice mail messages. Eventually we realized that we could use a 30″ stove by modifying our cabinets. Also, we had actually enjoyed using computerized oven controls in vacation rentals. Last winter we bought a regular GE gas range. So far it works great and looks good in their attractive “slate” color (my wife hates SS). There is the reliability issue because of all the electronics, but we purchased an extended warranty. In addition, @ aprox $1,000 v. aprox $8,000 we could replace the touch pad, or entire range, several times and still be ahead. We’re getting used to the five different sized burners.

I have a Chambers stove, one of the vintage suggestions. It’s terrific for very low heat. The gas control is remarkable. The burners are spaced far anough apart that I can use my largest frying pan as well as a big stock pot at the same time. The broiler is separate, and works as a broiler or a grill, and there is a thing called a “thermowell” which is meant for long, slow crockpot style cooking (more or less, but it’s the best succinct description). The oven is terrific for precise temperature. Cons: the broiler works best with its own tray – for example, you couldn’t put a cake pan in there to caramelize a cake topping, and putting a pan inside it makes it hard to raise or lower. The oven is TINY – I have to measure holiday turkeys before I buy them. Another problem is parts – there are a lot of parts available on eBay, but finding someone in the area who knows how to repair a stove of this vintage is iffy. We had an Amana stove before this, which was ok – not enough room on top for my largest pans to both work at the same time, though. Take your biggest pot, or a tracing of them, shopping with you. The other lesson I learned is that “digital” displays or buttons are bullshit. Make sure every knob is a regular knob – controls always break first (this goes for sound equipment too).

I wish we could have gotten a Chambers Cate, but we had a 36″ space and they’re 37-1/2″.

The Chambers has three burners plus a grill/broiler. The crockpot style thing CAN be used in a normal way for pasta water or anything being cooked fast, but there isn’t any modulation of the flame. It’s intended to be used by turning it on like a blast oven, then turning it off for a long time for covered slow cooking. You could do sous-vide in there too, since the temperature of the thing is a constant 140° (this “off” temp can be tweaked by messing with the pilot, but I just don’t go there) when it’s “off”. Let’s use beans, for an example. You boil dry beans for 20 minutes, then turn the burner off and let them sit for a few hours. I’ve used it “off”, uncovered to keep soup, chili or gravy warm for a party. It takes a little getting used to, and you need to have some pots (easy enough to find on eBay) which had been made expressly for the thing. But you can cook broccoli or short ribs or potatoes or whatever in there. Do a search on “Thermowell recipes” and you’ll see the kind of cooking it’s used for. ALso, search on “Chambers stove recipes”. There are some different ways of using the oven also. (“On” at a temperature probably high enough to to fire ceramics – briefly – then off for a while to complete cooking). Good luck.

We seriously considered a Big Chill, which combines Bluestar innards with a retro-shell that looks like a c. 1950 range. They’re beautiful, but like the modern-looking Bluestar, or any other pseudo-restaurant range, the bottom of the oven was too low to the floor for my wife.

BTW, if I could have bought the same GE stove I ended up with w/o electronics (except maybe a timer) and a knob and mechanical thermostat to control the oven and broiler I’d have done so, even though the electronic controls are working well (so far). It seems odd that the simplest ranges are also the most costly by far, combined with lower reliability (according to many sources) and undesirable design features (especially that low to the floor oven bottom).
