Induction or radiant?

Hi. We will eventually rehab an apartment a family member is currently living in. While I prefer cooking with a “real” stove, this small apartment can get by with an efficiency-style kitchen. I am endorsing a 2 burner gas stove. My husband thinks an induction cook-top is a great idea because it will be easy to keep clean. I HATE the idea of cooking on induction, and propose a radiant cook-op as a compromise. So, if you had to choose between radiant or induction, which would win? Secondly, would you even rent a small apartment with either of these?

I had induction cooktop in Tokyo and really hated it. I is ok to boil water. But anything requiring constant heat was almost imposible to do (i.e. crapes). Besides this gas is cheaper source of heat, it takes any form of pans and pots. Gas heats up faster. There is planty of cases with not enough Amps in the house hookup, but I never heard anyone complaining about not enough gas. There are planty of sealed glass gas cooktops, which are easy to clean. (here is one from IKEA: http://www.ikea.com/us/en/catalog/products/00110503/)

If there is gas service there already, go with gas. People seem to like it better.

A few years ago I bought a portable single burner induction unit to try.  I love it and cooked everything on it.  Recently I had a two unit induction cooktop installed (in my average size apartment).  If I ever need an additional burner, I can bring out the portable.  If you get renters who need more than 2 burners, you could offer to provide a portable for those times when they need it and then they get the benefit of having additional counter space when they don’t need more than 2 burners.  You don’t say why you don’t like induction but I think it’s fantastic and don’t see any downsides to it. Good luck with your rehab, whatever you decide to do.
