Decisions in Kitchen Renovation

Is it typical for people to hire a contractor based on an architect’s drawing and bid, with some concern about layout in the case of a kitchen wall coming down, and once the contractor has done the basic demolition (like taking out a wall), to make quick decisions once the space is open, and then go from there?  Is it ok to then quickly change our minds (or stick with the original plan), and then first order cabinets at that point, using whatever we decide for dimensions?  If we do that, do we end up with a major change order with the contractor that will cost a ton?  And are contractors used to this type of thing?  I’m guessing if we take this approach and we do make a change, then we’re adding time and money to the job.  If we take this approach and don’t make a change, we’re just adding time, right?  But in an old brownstone renovation, given what could be behind the walls once they are opened up, it seems safest not to order kitchen cabinets until the demolition is done.  I’d love a reality check.  Our architect is giving us advice and it’s good advice and he’s awesome, but I still want to educate myself in the meantime.  (we’re at the contractor bidding stage right now, waiting for bids)

It happens all the time.  These are old buldings and you do not know for sure what is behind the walls.  I have seen 3 or 4 layers built up over the years and for that matter, even an extra wall.  If you want to get the most out of the space you have to work with, wait til demo is complete.
