What can I do while waiting for permits for a Gut Reno?

I’m planning a gut reno soon and i know from the moment I file plans I’ll have to wait for permits. Is there anything I can do to save time? I thought about removing all the doors and hardware to see which ones can be saved/reused and then sand/repair and paint/refinish. I can clean up the hardware and buy anything that’s missing (hinges, doorknobs, plates). I thought about removing the molding that I want to save and perhaps having them stripped and saved for finishing work later. Anything else? Thanks all.
