Range Hoods

We are confused about what kind of range hood motor we need. There are two kinds— internal and external, plus an internal type that blows the air outside.
We live in an attached row house in Brooklyn. We have a 30 inch stove and ordered a 36 inch metal chimney style hood. The contractor installed a 6 inch duct which ends in a vent in the back wall of the house. We don’t understand what we are supposed to get and what is best.

dork, i am not saying that this is what op did, but what often happens is a GC is willing to include something as part of a quote but the homeowner will decide that they do not want to pay the GC’s mark up on something so they try to go that alone (or perhaps they feel the GC’s sub is too pricey). it also happens that GC’s sometimes do not want to put the proper effort into things and they try to cheap it and do it themselves with their “generalist” crew and customers don’t want that either.

as someone who specializes in something, i run into the above scenarios at least 4 times a year.

you can do external centrifugal fan as many restaurants do (metal and bell shaped) or an interior inline centrifugal fan mounted inside but next to the hole in your wall. power will need to be run to that location. any HVAC company can do this. didn’t your contractor have an HVAC sub? very odd that they would leave this to you.

to what arkady and NYC sport are saying, when i worked on cabinets in the big houses or when i have worked in commercial (including in college, i used to clean a hood system for a restaurant; in buildings where they had these it was my job was to call the service people) the fan is always elsewhere, at the end of the run or on the roof. sometimes there is a intake duct which is sort of rudimentary looking and that duct holds the filters and covering that is a decorative (even copper) hood that hides the rudimentary system behind it and coming off of all of that there is a hidden duct running to the rood or exterior wall. it seems that if the budget allows, the fan is not right there in the unit but elsewhere. i have a friend who installed a Wolfe System and i might ask him some of the pros and cons – he likes talking about this stuff and spoke about that wolf hood as if it were a Bently.

in commercial, these things are sort of regulated and i am GUESSING that some of this equipment has to be approved by some agency as they generally have all sorts of lables and th ings (in addition to the fire inspection tag for any fire system). i do not know if any of this regulation carries over to residential use so i am not sure if one is better to use a manufacturer like arkady used which seems to specialize or if they can use any old tin knocker who knows how to lay this out and put it together. in commercial, whenever we ordered custom stuff, we did go to a specialist and i think they had to apply a label saying it met some spec. it has been a while.

i have worked in several houses where i have turned big ones of these on to move air (fumes) out of the area we were working and the big ones literally suck the heat out of the place. these are the bigger units over the massive, commercial sized stoves. so consider sizing carefully. some are variable speed as well which might be a plus. i think the wolf i mention above is variable speed; the commercial units were not.

to what sportsnyc said, i once took an electrician on the roof to open those round hoods over the fan units for these in a commercial kitchen (a kitchen not much bigger than a residential kitchen) and the motors in these units are big (reletively) and the fans are large and if they were next to us, would be as noisy as a shop machine. same kind of speed and power. so as you transition from a big box store unit to something just a little better, there is going to be a big jump in terms of motor and fan size and maybe noise.

op, the person i speak of who had that other unit put in has been trying to reach me about something else. literally just texted me. if you have any questions about these system, post them and i will check back and run them by that person (that person was a contractor and when he works on his own house he goes into all sorts of research and detail). also, if you are spending any real money on this, maybe it would be worth the time to consult with someone like gennady who writes on here? even just to spec size and materials. keep in mind, fire safety is a factor with stuff like this –

There are different concepts being raised here. The “chimney” on the range hood is a decorative cover that surrounds traditional metal ducting. The motor can either be in the hood, or remote, as Arkady references – ie, along the duct lines, or even outside. Most “off the shelf” hoods have fans in the hood. If you buy a custom hood from the likes of ModernAire or RangeCraft the motor can be either. A bigger bonus of the remote motor is the lack of noise — a motor inside a substantial hood is VERY noisy.

Thirty years ago I had mine fabricated by Carts (who are still in business) & was told it is better to pull than push so the fan is located at the end of the duct just before it goes outside – about 20 feet from the hood. It’s a heavy-duty, restaurant-grade fan.

Things are more complicated these days I’m afraid. We are buying a Viking stove and we have an open floor plan, so the exhaust fan becomes more important .Viking and others sell the hood and motor separately. It is not just a plug it in and you will be fine kind of thing. There are all sorts of designer hoods and different motors.

It may be that the contracter just has a metal shell fabricated I have a homemade non-vented hood (made from an antique mahogany cornice, lined with sheet aluminum ) which I fitted a small vent fan, with a disposable charcoal filter fitted over it. The thing works as well as any non-vented hood. I don’t know if such a fan would be powerful enough for a ducted hood.
