Gas vs. Electric ovens

Hi folks. We’re doing a kitchen renovation and I have a question about gas vs. electric ovens. Our apartment has gas so we are installing a gas cook top. I want to maintain an uninterupted counter top line so rather than have a an all in one slide in oven/range (burners and oven in one appliance) I want to have a wall oven that slides into the cabinet beneath the gas cook top. Much to my surprise, There are almost no gas slide in wall ovens. (GE makes one). I’ve never used an electric oven before. I’m so wedded to gas for cooking that I would consider scrapping my plan for the seamless counter top look. My question is, what are the differences between electric and gas ovens when it comes to cooking? I presume that a gas oven is cheaper to run than electric. But what about cooking performance? Is there a difference? Am I being silly? Should I scrap my desire to have a gas wall oven? Thanks.

Go for an induction range. It overcomes many of the limitations of conventional electric ranges.

We did a similar thing to Brookgal- we got a Bluestar gas range and then two bosch electric ovens. The total price for all three was about the same as one combination gas/electric unit (I think it may have even been slightly cheaper to get the two ovens!) Very happy with the choice.

We achieved that continuous countertop by using a Wolf drop-in gas cooktop over a Wolf built-in electric oven. We love both. I agree with everyone else that an electric oven vastly out-performs a gas oven in my experience.

@Bob Marvin I’m not sure if they were bought off by sponsors, but I understand Jean Georges and Eric Ripert, among other great chefs, have induction cooktops and prefer them.

We’d consider it if it wouldn’t overload our panel. I love the clean lines.

@cate it’s a general rule that electric are better than gas ovens but not written in stone — for example, our crappy GE installed by prior owner is all gas and the damn thing has the most even, steady heat out of any oven I’ve ever had. If it weren’t so damn ugly we’d totally insist on keeping it when we reno!

Also it’s a tad more complicated to clean an electric oven with exposed elements. You have to be more careful.

Surprised everyone loves electric ovens. We had a rental quality (~$600) electric stove for a couple of years, then moved downstairs to a rental quality (~$600) gas stove. The only noticeable difference in the oven portion is that roast chickens would never really brown in the electric stove. I don’t recall ever baking in the electric oven so can’t compare. Best baking oven I ever had was a primitive 1930s gas stove with an after-market temperature gauge in an ancient rental in college. Best chocolate cake ever. Go figure.

If it’s not practicable to install a 220 V line it’s NOT that big a deal. Gas ovens might be theoretically inferior to electric, but it’s not as if they don’t work well. Even the other way, I’ve gotten used to using regular electric stove tops in vacation rentals and they’re not THAT bad. I understand that some people even prefer the smooth-top induction stoves over gas (although never having used one I’m not sure).

I notice that that this is for an apartment. Do you already have a 220 V line installed? If not it’s a fairly big deal to install one since it will disrupt other apartments in the building.

ditto the gas/electric combo; earlier this year we parted with our 25-yr-old gas double-oven (only one worked the last decade), and searched far-and-wide for a gas-replacement before settling for an electric double – which has been just great so far – complemented by a four-burner gas cooktop

Thanks. It seems my options are to either go with the gas cook time and cabinet/slide in electric oven beneath it, or to nix my desire to have an uninterrupted counter line by installing a full gas range. There are a few models out there that I like, for example the GE linked below, but it seems like the consensus is that I should not go with a gas oven, that electric ovens are better as long as I am not broiling. An electric oven holds a much steadier temperature than a gas oven. Also, for what it’s worth, I’ve worked as an architect for 15 years and almost 100% of clients go with electric ovens (I would too as I have a gas oven that I hate and it’s a Viking so we know it’s not a quality issue).

If you want to maintain an unbroken countertop then definitely go for the drop in gas cooktop and slide in electric (or gas) oven. Re gas wall ovens – Viking use to do a lovely one that I believe has been discontinued though you may be able to find it in stock at some suppliers’ warehouses.

@EJR we have a dual fuel oven as described above. We have a gas cooktop with an electric oven with a gas broiler unit. It does not meet the “smooth” counter requirements mentioned by the OP, though.

The cost of cooking gas is negligible and shouldn’t be a consideration.

+1 for gas cooktop, but electric oven. I do think there are some models on the market, likely at the higher end, that have a gas broiler incorporated into an otherwise electric oven. That is, of course, ideal, since an electric broiler is no broiler at all.

There are gas convection ovens; I have one and it works well. However AFAIK the best combination is an electric oven and a gas cook top.

As a baker, I have been coveting an electric oven for years for its evenness in temp. Though you can get a nice, evenly heating gas oven, electric are more widely recognized as having the even, steady temps bakers want.

Gas cooktop/electric oven is the way to go.

An electric oven maintains a more steady temp than a gas one. I believe convection ovens must be electruc but I don’t have one.
