How long do the approvals take when changing to food use from not food use?

For example, going from dry to wet or say a retail store to a restaurant?

Another issue often overlooked is that the entire space connected to an eating establishment has to pass the health and building codes. Including cellar space if it is connected. Bathrooms will need to be ADA compliant.

You have to deal with the DOB, the NYCFD, the Health Dept and the department of consumer affairs to get all of the licenses required to open a cooking & eating establishment.
Hire an Architect that specialists in Food & Eating in NYC. They generally are not the cheapest, but it will save you months; and I do mean months as well as no re-does because many of the agencies that you have to deal with conflict each other and if you do not get the order right, you have to do a re-do!
This is why buildings that already have legal food & cooking use are more expensive; both to buy &/or lease.
Changing the use is a lot of time & money.
