Best material for a coffered ceiling under a deck

I want to install a coffered ceiling with recessed lights and a fan on the under side of the concrete deck above. What is the best wood-like material (non-combustable) for a project like this? I have heard of prefab plastic coffered ceilings but I think there must be a better material that will pass fire inspection.
