Favorite Stove?
I was dead set on the Bertazonni because I loved the look. But the bulk of the price is basically that. I even decided to overlook the downsides of the oven. It’s 3.7cu feet which is very small compared to your other choices. Oven size wasn’t really high on my priority as I am Chinese and we rarely use the oven. Also the temperature of the oven is not exactly super accurate. I was on garden web forum asking and reading threads about the stove and there are complaints that the oven temp’s vary. It’s definitely not as accurate as a bluestar or other higher end professional range. I even went to a dealer in the city and they confirmed the same thing. I also looked at NXR which seemed like great bang for you buck and you can also purchase them through Costco(I believe online only now) and you would get their warranty on it. Ultimately I was swayed over to a more modern stove. At almost 1K cheaper than the Bertazonni(1200 cheaper for me as I wanted the professional bertazonni), I couldn’t justify the price difference. The Bertazonni has a 18K btu power burner and so does the samsung. The oven is 5.8 cu feet which is much larger and the lower compartment is also a warming draw. The standard Bertazonni stove is just dead space and only on the professional model is it a storage draw. I still love the look of the Bertazonni and think its one of the sexiest stoves out there but the pros and cons just didn’t weigh out for me. Good luck hope this helps.

Does anyone have a favorite stove they would recommend? This is for a traditional unfitted kitchen in a Victorian row house. We need to replace ours because the oven is unusable. We probably have to stick to a 30-inch model, unfortunately, because of space considerations. (We could also accommodate a really wide stove but it would have to be super shallow to fit on the hearth, like a ’30s stove.) Thanks!

We did the 30″ Bertazzoni and fit it into the old wood-burning 30″ hearth. It is a great “professional” model range, which I have since found that professional means high powered burners. Everything else is about what you get with the Roper Landlord model – manual cleaning, dial oven temp gauge, no clock, no timer, really nothing but a manually operated range that looks good. It does have a fan and does convection baking which is nice. I do like the look however, and for what it is it has been great, as long as cleaning ovens with Easy Off and gloves is your thing. We splurged a whole $500 extra for the glass dial “thermometer” addition, that you conveniently can’t quite make out what it actually shows on their website. Save yourself $500 because it only shows “Cold” “Preheat” and “Hot” That’s it. No numbers, no temperature, nothing. All you get for $500 is the basics of a waffle iron. My partner always sarcastically asks me, “Is the oven hot yet?” due to what we feel was false advertising. I have determined “Hot” to be approx 375 using a real oven thermometer from BB&B. So if you are baking a cake at approx 350 on the dial, it’s merely preheat and not hot. So… I know you are looking for recs, it has been a great reliable range, looks great, and does sear tuna like a champ, but was it worth $2500? I am not sure I’d recommend it…

GE Cafe series. We’ve had ours for a couple years and it’s been great. It also has convection capabilities which speeds things up a bit.

From what I know convection is really just the addition of a fan in the oven the blows the heat around thus speeding up cooking. There are probably other benefits that I’m not aware of. You always have the option of using it or not. I frequently use it since I’m a bit impatient when baking or roasting. It’s always nice to have the option.

We are really happy with our Bluestar cook top and wall ovens…they make 30, 36 and 48 inch ranges, too, but aesthetically, we wanted their french door wall ovens. They make professional grade appliances…Marcus Samuelson does a line for them. Keep in mind that when you are considering any professional grade ovens, you MUST consider how you are going to vent.

If it’s in your budget, I highly recommend a Capital Culinarian range. It has open burners that put out an incredible number of BTUs; the oven heats up really fast; the broiler is insanely powerful; and the aesthetics are really nice. I couldn’t be happier with it.

I cook and bake a lot and will never easily give up the convection option in my oven. It’s fantastic for things like pizza and crisping things up a little more. Also, we have an electric oven with gas burners on top and I think it’s a good configuration. I think electric ovens are a little better at maintaining temperatures, though modern ones could be better than the older models I’ve used in the past. Gas burners are great for quickly changing the temperature.

Thanks everybody, all these comments are incredibly helpful. BedStuyTownhouse, how did you vent yours? The stove is about six feet from the windows. We can vent up the chimney — if we put in a new liner — but there are two things I don’t understand. One, can you place the screen and fan inside the chimney where they won’t be seen — so the chimney itself replaces the vent hood? Second, can you vent the oven into the chimney as well? All ovens in California, where I am from, are vented to the outside by law, and all stoves are sold with an outlet in the back for this purpose, but whenever I mention this to a chimney person in NYC they look at me like I’m insane.

I’m doing a little price comparison — it seems like BlueStar and Bertazzoni have the lowest prices of the “professional” type stoves, both offering 30 inch models for about $2500\. I recently cooked on a friend’s Wolf (nothing too taxing — just scrambled eggs and pancakes!) and I must say it had a very nice feel to it. I think those and other stoves are at least $5,000, right? Do you think BlueStar and Bertazzoni are just as good or better?

From what I understand, ovens used to be vented the outside, but modern ones now just vent into the room. I have yet to see a new oven that vents to the outside.

Regarding venting, we moved our kitchen from the garden floor to the parlor floor and had a plumber/hvac guy run the vent over the cabinets and they drilled a hole through the rear, exterior wall. My understanding is that venting through the chimney is not to code but you may want to confirm that with someone who would actually know. The kitchen we eliminated sounds like the set up that you describe and it had a hood which vented into the chimney. We bought our appliances from Plessers and were very happy with them and they offered the best price, no tax and no delivery and I’m sure you saw that you can order the stoves in custom colors…we ended up just going with stainless but I really wish we did a color.

I cannot speak as to which brand is better. BlueStar and Capital Culinarian are both cult-y brands that serious home chefs know about whereas everyone knows the name Wolf and Viking, the latter of which has a terrible track record with after-sales service but people still buy their product. We have a friend with a Wolf and they are very happy with theirs…they live in a high-end condo and it came in the appliance package.

I’m a huge home cook but w/o a huge budget. I have had a dual fuel Jenn Air for the past 15 years that has performed flawlessly. I especially love the convection oven — so reliable for baking and roasting. I dare say the BTUs from the stovetop gas burners are less than some folks would want but fine for me. By the way, it has a down vent that’s not perfect but adequate and certainly much better looking than a honking great hood. My mother cooked her whole life w/o a vented stove — she just threw open the window!

Hi Cate! I wanted a professional grade stove for under 2500K. I looked at the Bertazzoni and really liked the look but ended up going with an NXR- purchased from Costco on sale at $1800\. The reviews of the NXR are mixed but Costco has a great warranty program, so I wasn’t too worried. So far the stove is pretty powerful and I didn’t realize how hot these professional series stoves can get. I have a vent that can use charcoal or be vented outside. Right now, I’m venting with charcoal but plan to eventually vent to the outside.
