Yes, that’s why it’s so tasty. And good for you, I’m sure of it. The D’Artingnan duck breast has a layer of fat an inch thick. It stays intact when you cook it. It looks just like the marshmallow in a chocolate marshmallow candy. Only it tastes even better. The D’Artingnan ones are the best — they don’t have that gamey flavor and they’re not tough. I think it’s $20 for two at Citarella or something like that. They come in vacuum packs. You couldn’t eat more than one a month.
Very tasty with French green lentils, and wine butter shallot sauce with some dried cranberries.
