Denton, actually, Grand Sichuan’s sliced fresh pork is also a huge mound of bacon (uncured — it’s pork belly) with leeks, chili peppers, and homemade black bean sauce. It’s delicious. The twice-cooked pork is disgusting, tastes like it’s gone bad. I don’t want to hear anything about how bacon fat is bad for you. It’s just like in Sleeper, it’s a health food.
The Portuguese in Provincetown call theirs linguica.
