These came from Fresh Direct. Food delivery is a wonderful thing 🙂 Steaks are medium in terms of thickness. I salted, peppered them and smothered with sweet vidalia onions and a garlic rosemary marinade. Should be tasty. I’m just super low energy these days and want to make sure I cook it right so that I’m not spending too much energy chewing one small bite for 20 minutes.

I’ve never cooked a steak stovetop. Always broil. With a thin steak I tend to marinate against type — lime/fish sauce/cumin rather than going heavy. Thicker steak, don’t bother. And dibs’s right — let it set before serving or cutting into it. A good skirt steak will still be juicy and tender at medium. Buy it from United up on PPW. I’m actually headed there now, myself.
I haven’t cooked steak in ages. If you all see plumes of smoke and walls of flames coming from the GH area, it’s been real knowing you.

I sear it stovetop, then put it in the oven at around 400 for a few minutes. I like mine rare to med rare.
