  1. It’s all about the temperature. Certain oils burn before they reach a temperature adequate for a good crisp fry. Get yourself a thermometer and do some research about what the best temperatures are. Olive oil is the worst because of its extremely low temp at which it burns and smokes.

    Additionally, the more fries you add to the oil, the more you lower the temperature which is bad. Do small amounts but try and keep the temperature as uniform as possible.

  2. ExTex – If it’s hot enough oil, the food you’re cooking shouldn’t absorb much of it. The reasons some oils are better is that they can be taken to higher heat. I add a bit of bacon fat for better flavor – but not much since it lowers the degree to which you can heat it.

    When I looked up Vegetable Oil, it broke it down into different oils (canola, corn, Peanut, etc.)

    Okay, more research shows that Canola Oil is the best. It has the lowest amount of Saturated fat (which is bad for you) at only 7%.
    Coconut Oil has the highest at 92%!!!!!!
    Butter = 66%
    Corn Oil isn’t bad either, it has 13% saturated fat.

    Later I’m going to go buy Canola Oil and a fire extinguisher. This should be interesting.
