    ET, sarcasm aside for the moment, I fry potato latkes in Canola oil, using my largest frying pan and plenty of oil, and they always come out great.

  2. ET, I always try and use a fruity olive oil that is a first cold press. There’s so much chicanery in the olive oil industry that I at least want someone to lie correctly. I like Costco’s, btw. Not the cheapest but not too expensive either. And if you think olive oil should have a fruitiness to it in salads, it’s pretty good.

    I live on a Mediterranean diet. I just won’t heat olive oil to a high temp. Light sauteing would be fine, but again I wouldn’t use an extra-virgin (re-write).
