Best Cajun or Creole Fare in Brooklyn?

We’d love to celebrate Fat Tuesday with an authentic New Orleans-style meal. Can anybody recommend a good cajun or creole restaurant here in Brooklyn? We had a decent dinner at Stan’s Place (411 Atlantic Avenue in Boerum Hill) when they first opened, and they’re having a $15 buffet tonight with specials on Abita beer. NoNo kitchen (293 7th Avenue in Park Slope) is another option, though it’s gotten very mixed reviews on the Brooklynian boards. But what we really wanna know is will either of these spots (or any other borough bars or restaurants) make us a decent Hurricane?

If you want an AWESOME Hurricane (know this is a few months out) but at Mama’s Bar at 3rd and B there’s a great bartendress by the name of Emery…she’s originally from Na’wlins and will craft you the best Hurricane you can find in NYC.
Stan’s Place has a good brunch (our favorite is Big Bubba’s, with grits) and the owner, Stan himself, is a great guy. The service is a little slow but I guess it’s in keeping with the New Orleans vibe. Oh, the Banana Foster Bread Pudding is very good too.
I had one of the worst experiences in recent memory at Stan’s. The food was good, and the music was delightful, but the service was so bad, and so rude I will never go there again.
They also apply a mandatory 20 percent tip on all meals (I tip 20 percent on my own already) but I am guessing this is why they are so bad. The servers have no reason to be any better or any nicer.
After I paid, I mentioned that I would have appreciated being told about their cash only/American Express only policy before the meal. The response I got was totally nasty and defensive. I had already paid, they could have been gracious, and instead they chose to try to humiliate me. The food is not good enough to make up for it. What a waste of a night.
