Signage has gone up for Surfish Bistro, the forthcoming Peruvian restaurant on 5th Avenue between 4th and 5th streets, which, as Here’s Park Slope reported a few weeks ago, is replacing Willie’s Dawgs. The business also has a Facebook page that says the following about it: “Chef Miguel Aguilar opens his first Restaurant in New York, bringing over 20 years of experience. Formally trained under Iron Chef Bobby Flay he developed a passion for gourmet cuisine strongly engrained in his heritage, creative flair and a nose for quality, making him a bonafide Peruvian Cuisine Master.” According to the page, Surfish Bistro’s price range will be $10-$30.

The good news is that their headliner will be fried guinea pig, i.e., cuy chactado, a truly fantastic dish that I recommend everyone try.
From the sign, I was hoping for fish tacos.

The owner is going to be on Chopped on the Food Network pretty soon! Wonder if his appearance had anything to do with opening this place up…
