Our Oysters are sourced from the most pristine and coldest water. We prefer to work with North Atlantic Oyster growers, spanning from New York through Canada. These growers are the most local to NYC, which means we are serving our Oysters as close to the harvest date as possible.
The human physiological response to an Oyster transcends verbal explanation. When you eat an Oyster you wake up. You are immediately connected to the sea and the salt, the edge of where the water meets the land, to a place beyond time.
