It’s amazing, and it’s amazake! Literally translated as “sweet sake,” this creamy Japanese beverage actually has very little alcohol. Nowadays, everybody sips it warm, but throughout history, children and seniors in the Land of the Rising Sun drank amazake cold during the heat of the summer’s monsoon season. Made from koji (or cultured rice) that is incubated overnight until it becomes lightly fermented, this refreshment is rich in enzymes, vitamins and other nutrients. On March 9, LIC cafe/gallery/performance space Resobox will offer a class on how to make amazake at home. Among other things, the class will cover the libation’s history; nutritional information; detoxifying effects; and uses in salads, pancakes, smoothies and salad dressings. The event will include a demonstration and tasting.
