Skim-coating and Stucco removal: recommendations?

We are updating a few rooms in our Greenpoint house. A kitchen and hallway need to have the stucco removed (is this a skim-coating process?) and the walls of the living room need to be skim-coated for an even surface. Does anyone have any recommendations for someone that can do this affordably and quickly? Thanks!
