Getting fabricator to hon polished marble without swirls

We are putting white marble countertops in our kitchen and are having a hell of a time finding a slab that we like that is already honed from the factory. All the good pieces we are seeing are polished, so we will most likely buy a polished slab and have it honed. We would like our stone fabricator to hone the polished stone, but they warned that there could be swirl marks afterwards. One stone yard we went to said it was a red flag that the fabricator couldn’t promise the honed stone would be swirl free. Does anyone have any experience with honing polished marble? Do you have fabricator recommendations? I would love to find a place that can replicate the factory honing that they do in Italy.
