Gap between floor and molding.
There’s a sizable gap between the bottom of the molding and the floor near the party wall of my brownstone – around 1 1/8″. I don’t think it’s anything structural – it’s an aesthetic & insulation thing. What would be the remedy for this?

What makes you think that is nothing structural. That is a pretty wide gap and one that has formed over time.
OP: I thought most shoe moldings only come in 1″.
This is 1 1/8″ (1.125″) at the largest point and tapers down to nothing in other places.
Easiest professional remedy, Install a new shoe molding
( molding which sits on floor at bottom of baseboard )and which will follow the contour of the floor.
Other more expensive option – scribe new baseboard to uneven floor.
Or you could simply caulk the gap if it is no bigger than 1/8”
