help with finish for wood bar/counter-top

I built (helped build) a sturdy, rustic bar-height island, attached, table thingy. We still haven’t decided exactly what it is, but it will serve as our dining and entertaining area for our small kitchen living space room. My problem is the finish.
I applied 7 coats of minwax water-based, clear polycryllic from a recommendation from the Lowes guy (kicking myself). It looks nice. It is not as thick as I thought it would have been, but most importantly, it clouds with moisture or heat (a hot plate, a sweaty glass).
We want to use this as a high-traffic, food prep, eating and living area. The design of the thing lends itself to a thick coating you would see in an actual bar that will resist reaction to water/heat.
my 2 questions: what can I use to get a thick finish like you would see in a bar that won’t react to water? and 2) can I apply it over what’s there now?

You can get the epoxy resin at Home Depot and Lowes. It’s in the section with the other varnishes, shellac, polyurethanes, etc.
It is VERY smelly and toxic when wet. Follow directions very carefully, and wear a respirator. Keep kids and pets far away, and sleep/live as far away from the fumes as possible. Ventilate, ventilate, ventilate.
The good news is the stuff is fine after it dries, which is in a day or so, depending on how thick you pour it.
that is an expoxy fininsh. it is a two part system, one the expoxy the other a hardner. prep the surface, they usually put masking tape around the bar, mix the two solutions then pour it on the surface, about 1/4″ thick. it hardens by the ratio of hardner to solution, over night is a safe bet. i don’t know if you can do it over poly thou.
